Loaded Avocado Toast Recipes (4-Ways)
Sometimes I find it funny how trendy avocados have become. I mean, when I initially started hearing about the hype of these weird looking fruits, I just didn’t get it. But, after some time (and experimentation in the kitchen), I have jumped on the avocado bandwagon. Since then, I’ve pretty much used them in any way possible! Not only are they the most beautiful, appealing shade of green, but they’re a super easy way to incorporate healthy fat. They’re a power food. They are perfection.
I can also personally say that they aid in weight loss, since adding avocado to literally anything fills me up & satisfies my cravings much quicker! If you’re not feeling satisfied after a meal, just add avocado next time. Healthy fats are SO crucial.
For this reason, I’m going to share 4 different ways to make heartier (and more majestic) versions of avocado toast.
I eat different versions of avocado toast almost every day, usually right when I get home from work. Working outside in the sun makes me a ravenous she-beast, so having some avo-toast right when I get home is a healthy, filling way to subside those cravings.
These four recipes include an option for every type of craving. All of them are so loaded with tasty ingredients, they definitely count as full meals! Also, since avocado toast is already legit, why not take something (soooo) good and make it even better.
To make my life easier I use this tool, which in my opinion is the holy-grail of avocado cooking. It’s the OXO Good Grips 3-in-1 Avocado Slicer. It cuts, cores, and slices the avocado perfectly, so not only will your slices look super aesthetically pleasing, but you’ll prep avocados like a mad person! A must need for daily avocado eaters.
So let’s get started!
Goat Cheese & Egg Avocado Toast
This recipe is my absolute favorite, and my daily go-to. Pretty much anything with goat cheese is a must for me, but the addition of scrambled eggs and live sprouts put this avocado toast over the edge in terms of a healthy, satisfied stomach!
2 Eggs 1/2 Avocado (sliced) 2 Green Onions 1/4 Cup Goat Cheese — Plus More for Topping Live Sprouts (small handful) Slice of Toasted Bread (I prefer Sourdough) Salt & Pepper (to taste)
Whisk 2 Eggs and add salt & pepper. Add to pan under medium heat, along with chopped green onion, and 1/4 cup goat cheese (I like a ton cause I’m a goat cheese freak, so you can do less if you wish). Scramble eggs. Add scrambled eggs to toast. Then top with sliced avocado, goat cheese sprinkles, and live sprouts.
Caribbean Avocado Toast
Coming from a Hispanic background, this recipe is one of my all-time favorites. I could have sweet plantains on pretty much anything, but the addition of the mango and hot sauce makes this one of a kind!
1/2 Avocado (sliced) 1/2 Mango (sliced) 1 Medium Overripe Plantain (peeled) Olive Oil Spray Salt (to taste) Cilantro (for garnish) Hot Sauce (to taste) Slice of Toasted Bread (to preference)
Preheat your oven to 425F and lightly spray baking sheet with olive oil. Slice plantain diagonally to create about 1/4 inch thick slices. Place plantains on baking sheet, lightly spray with olive oil, and sprinkle with salt. Bake plantains for about 10-12 minutes (or until golden-brown at the bottom). Flip plantains and bake for another 5-6 minutes. When done, remove from oven, and set aside. Add sliced avocado to toast. Then top with plantains, mango slices, cilantro, and hot sauce.
Mediterranean Avocado Toast
I love Greek-style food, so this is a way to get that fix in easy avocado-toast form! I eat this with a side of pita slices and hummus.
1/2 Avocado Salt & Pepper (to taste) 1/2 Lemon 1 Tbsp Olive Oil 1/4 Cup Chopped Red Onion 1/4 Tomato Chopped 1/4 Cup Chopped Cucumber 1/4 Cup Sliced (Pitted) Kalamata Olives 1 Tsp Oregano Feta Cheese (for topping) Slice of Toasted Bread (to preference)
In bowl, mash avocado with fork. Season with salt & pepper and stir. Set aside. In separate bowl, whisk together olive oil, juice from lemon, and a dash of salt and pepper. To the olive oil mix, add onion, tomato, cucumber, olives, and oregano. Toss well. Add mashed avocado to toast. Top with 1/3 cup of mixture. Sprinkle with feta cheese.
Southwest-Style Avocado Toast
I feel it would be wrong to make a recipe post about avocados, and not include a Southwest-Style option. This recipe includes chorizo refried beans, which I’m pretty sure I could eat everyday and never get sick of. Seriously, if you’ve never added chorizo to avocado toast, IT’S TIME.
1/2 Avocado Salt & Pepper (to taste) 2 Links Pork Chorizo 1 Can Beans (I use Pinto, but you can use any type. I highly recommend any beans by Goya) 1 Tbsp Olive Oil 1/4 Cup White Onion (chopped) 1 Tbsp Minced Garlic (but let’s be real I usually use 2-3) Pico de Gallo (store-bought or homemade) Cheddar Cheese (for topping) Sour Cream (for topping) 1/4 Lime (for topping) Slice of Toasted Bread (to preference)
In bowl, mash avocado with fork. Season with salt & pepper and stir. Set aside. Add olive oil to pan and put over medium heat. Remove casings (if any) from chorizo and add to pan. Let fry for 4-5 minutes so the chorizo can absorb the olive oil. Add onion and garlic to pan, and let cook for about 2 minutes. Add can of beans (with liquids) to the mix, stir, and allow to simmer together for about 10-12 minutes. Season with salt & pepper to taste. Use a fork to mash the beans (or can blend in a food processor). Feel free to leave some whole beans in there if you want a more chunky consistency! You will likely have extra pork chorizo refried beans to spare, so pack that deliciousness away in the fridge and use it for whatever. Add mashed avocado to toast. Top with 1/4 cup chorizo bean mixture, pico de gallo, cheese, and sour cream. Squeeze lime juice on top.
So there you have it! I hope these 4 ingredient-loaded recipes will satisfy your cravings, and hopefully serve as inspiration in making your own avocado toast customizations. Keep in mind that while these recipes are LEGIT and my personal favorites, feel free to mix it up, and make some recipes more tailored to your preferences. It’s really hard to go wrong with avocado toast, so let your creativity run wild!
